Serbia – Sremski Karlovci, winery Bajilo (May 2014) Sremski Kralovci is located on the slopes of Fruška gora 10 km south of Novi Sad. This fairytale town, which today has only 9,000 inhabitants, is known for its numerous Baroque buildings, hospitality, and good wine. Serbs who lived for centuries in the Habsburg monarchy fought to preserve their cultural and national identity, but when it came to fashion and all kinds of European innovations, they imitated Vienna in many ways. Written sources tell us precisely that the emperor Marcus Aurelus Probus brought wine from southern Italy to Srem at the beginning of the 3rd century BC.

During the Middle Ages, more precisely after the Battle of Kosovo, Serbs from the area of ​​Metohija and other occupied areas, who were good winegrowers, moved to the vicinity of Fruška gora. After the great migrations of Serbs at the end of the 17th and the middle of the 18th century, Sremski Karlovci became the center of the Serbian aristocracy, which in many ways imitated the imperial Vienna. Although today there are several good wine producers and active wine cellars in the city, the Bajilo winery occupies a special place. This family winery is not only known for the production of excellent wine from its vineyards, but also for the extraordinary ambiance of the cellar located in the heart of Sremski Karlovci. The Bajilo family moved from Dalmatia in 1966. in Sremske Karlovce. Today, the fourth generation with great experience but also enthusiasm produces an enviable number of quality wines, of which 65% are domestic varieties. The most famous white wine varieties are Italian Riesling, Rhine Riesling, and the indigenous Sila variety. Among the red wines, the local Portugizer, Vranac, and Cabernet Sauvignon are represented. Another of the far-famed products is the aromatized Bermet wine, which was served in European courts at the end of the 19th century. Bajilo Winery is located in the cellar from 1864. in the city center whose length is 50 m and what is most important for storing wine, the constant temperature is 11 C.
